Baked Black Bean and Vegetable Tortilla Casserole
This hearty, Mexican-inspired casserole features layers of corn tortillas, savory black beans, sautéed vegetables, and melted cheese, topped with fresh lettuce, tomatoes, and green onions for a satisfying and flavorful meal.

Preheat oven to 350°F. In a saucepan, combine the onions, peppers, tomatoes, picante sauce, garlic, and cumin. Bring to a boil, then reduce heat and simmer for 10 minutes, uncovered.

Remove 1/2 cup of the black beans and set aside. Stir the remaining beans into the onion mixture.

Spread a third of the bean mixture in a 13x9-inch baking dish coated with cooking spray. Layer with 4 tortillas and 2/3 cup of the cheese. Repeat the layers, then top with the reserved 1/2 cup of black beans.

Cover and bake for 30-35 minutes, or until heated through. Sprinkle with the remaining 2/3 cup of cheese and let stand for 5 minutes, or until the cheese is melted. Serve with the toppings.
