Preheat oven to 350°F. Make a 2-inch wide V-shaped cut in the center of each bun, leaving 1 inch at the bottom. Remove and save the cut portion for another use. Place the buns on an ungreased baking sheet.

In a large skillet, cook the ground beef over medium heat until no longer pink, about 6-8 minutes, breaking it into crumbles as it cooks. Drain any excess fat. Stir in the spaghetti sauce, garlic powder, and Italian seasoning. Heat the mixture through.

In a small bowl, mix together the ricotta cheese, Parmesan cheese, and half of the cheddar and mozzarella cheeses. Spoon the meat sauce into the prepared buns, then top with the ricotta cheese mixture. Cover the buns loosely with foil.
