Baked Cheesy Spinach and Mushroom Stuffed Pasta Shells
Jumbo pasta shells are filled with a creamy, cheesy spinach and mushroom mixture, then baked in a rich marinara sauce and topped with melted Italian cheeses for a comforting and flavorful Italian-inspired dish.

Preheat oven to 375°F. Cook the pasta shells according to package directions until al dente, then drain and rinse with cold water.

In a skillet, melt the butter over medium-high heat. Add the mushrooms and onion, and cook until tender, about 4-6 minutes. Stir in the garlic and cook for 1 minute more.

In a large bowl, mix together the eggs, ricotta cheese, spinach, basil, and pepper. Fold in the sautéed mushroom mixture, olives, and 3/4 cup each of the Italian cheese blend and mozzarella.

Spread 1 cup of the marinara sauce in the bottom of a 13x9-inch baking dish. Stuff the pasta shells with the cheese mixture and arrange them in the dish, overlapping slightly. Pour the remaining sauce over the top.

Bake, covered, for 40-45 minutes until heated through. Uncover, sprinkle with the remaining cheeses, and bake for 5 minutes more until the cheese is melted. Let stand for 5 minutes before serving. Garnish with additional fresh basil if desired.
