Braided Challah Bread

In a large bowl, dissolve the yeast in the warm water. Add the oil, sugar, salt, eggs, and 4 cups of flour. Beat until smooth. Gradually stir in the remaining flour to form a firm dough.

Turn the dough onto a lightly floured surface and knead for 6-8 minutes until smooth and elastic. Place the dough in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled in size, about 1 hour.

Punch down the dough. Divide it in half, then divide each portion into thirds. Roll each piece into a 15-inch rope.

Place 3 ropes on a greased baking sheet and braid them. Pinch the ends to seal and tuck them under. Repeat with the remaining dough. Cover and let rise until doubled, about 1 hour.

Preheat the oven to 350°F. Beat the egg and cold water, then brush the mixture over the braided loaves. Sprinkle with sesame or poppy seeds, if desired. Bake for 30-40 minutes, until golden brown. Remove the loaves to wire racks to cool.
