In a large bowl, dissolve the yeast in the warm water. Add the warm milk, eggs, butter, sugar, and salt. Beat in 3 cups of the flour until smooth, about 2 minutes on medium speed.

Knead in the remaining flour, 1/2 cup at a time, until the dough is soft and elastic, about 6-8 minutes. Place the dough in a greased bowl, turning once to coat the top. Cover and let rise in a warm place until doubled in size, about 1 hour.

Punch down the dough to release the air bubbles. Turn the dough onto a lightly floured surface and knead in the shredded cheddar cheese. Divide the dough in half and shape each portion into a 6-inch round loaf. Place the loaves on greased baking sheets, cover, and let rise in a warm place until doubled, about 45 minutes. Preheat the oven to 350°F.
