Creamy Baked Beef or Chicken Enchiladas
Tender shredded beef or chicken wrapped in soft tortillas, smothered in a rich, creamy green chile sauce, and baked to perfection with melted Monterey Jack and cheddar cheeses.

Preheat oven to 350°F. In a saucepan, melt butter over medium heat. Sauté onion and garlic until onion is tender. Blend in flour. Stir in broth, milk, chiles, salt, and cumin. Cook and stir until thickened and bubbly. Reduce heat and simmer for 5 minutes, stirring occasionally. Set aside.

Grease a 13x9-inch baking dish. Spoon a little sauce in the center of each tortilla and spread to the edges. Place about 2 tablespoons of the meat down the center of each tortilla. Combine the cheeses and sprinkle 1-2 tablespoons on top of the meat. Roll up the tortillas and place them seam-side down in the prepared baking dish. Pour the remaining sauce over the top and sprinkle with the green onions and remaining cheese. Bake, uncovered, until hot and bubbly, 20-30 minutes. Serve with sour cream and salsa.
