Creamy Chicken and Tater Tot Casserole

Preheat the oven to 400°F. In a large saucepan, combine the cream of chicken soup, milk, and butter. Cook, stirring, over medium heat until heated through. Remove from heat and stir in the cooked chicken, frozen peas and carrots, and 1 cup of the shredded cheddar cheese.

Transfer the chicken and vegetable mixture to two greased 8-inch square baking dishes. Top evenly with the frozen Tater Tots. If desired, cover and freeze one casserole for up to 3 months.

Bake the casserole(s) until bubbling, about 25-30 minutes. Sprinkle the remaining 1/2 cup of shredded cheddar cheese on top and bake for 5 minutes more, until the cheese is melted.
