Instructions

1
Preheat oven to 325°F. In a small bowl, combine the crushed chocolate wafers and sugar. Stir in the melted butter until well combined. Press the mixture onto the bottom and 1-1/2 inches up the sides of a greased 9-inch springform pan. Place the pan on a double thickness of heavy-duty foil and wrap the foil securely around the pan. Place the pan on a baking sheet and bake for 12 minutes. Allow to cool on a wire rack.

2
In a large bowl, beat the cream cheese, sweetened condensed milk, chocolate syrup, and vanilla until smooth. Add the eggs and beat just until combined. Fold in 2-1/2 cups of the chopped Snickers candy bars. Pour the filling into the prepared crust. Place the springform pan in a large baking pan and add 1 inch of hot water to the larger pan.

Bake at 325°F for 75-80 minutes, or until the center is just set and the top appears dull. Remove the springform pan from the water bath and allow to cool on a wire rack for 10 minutes. Carefully run a knife around the edge of the pan to loosen the cheesecake, then cool for 1 hour longer. Refrigerate the cheesecake overnight.

Top the chilled cheesecake with the remaining chopped Snickers candy bars and drizzle with additional chocolate syrup before serving.
