Allow egg whites to come to room temperature for 30 minutes. Preheat oven to 350°F and position the rack in the lowest position.

Sift together 1/2 cup of the sugar and the cake flour. In a large bowl, beat the egg whites, cream of tartar, vanilla, almond extract, and salt until soft peaks form. Gradually add the remaining sugar, beating until stiff peaks form. Gently fold in the flour mixture in batches.

Carefully spoon the batter into an ungreased 10-inch tube pan. Cut through the batter with a knife to remove any air pockets. Bake for 35-40 minutes, until the top is lightly browned and the entire surface appears dry.

Immediately invert the pan and allow the cake to cool completely, about 1 hour. Run a knife around the sides and center tube to release the cake, then transfer it to a serving plate. Serve plain or with whipped cream and fresh berries, if desired.
