In a Dutch oven, combine the sliced apples and water. Cover and cook over medium heat until the apples are tender. Measure 4-1/2 cups of the cooked apples and return them to the pan.

Stir in the sugar and butter. Bring the mixture to a full rolling boil over high heat, stirring constantly. Stir in the liquid fruit pectin and continue to boil for 1 minute, stirring constantly.

Remove the pan from the heat and skim off any foam. Stir in the ground cinnamon, nutmeg, and mace (if using). Carefully ladle the hot jam into seven hot half-pint jars, leaving a 1/4-inch headspace. Remove any air bubbles and adjust the headspace if necessary. Wipe the rims of the jars clean.

Center the lids on the jars and screw on the bands until fingertip tight. Place the jars in a canner with simmering water, ensuring they are completely submerged. Bring the water to a boil and process the jars for 10 minutes. Remove the jars and allow them to cool.
