Savory Asiago Cheese Bagels

In a bread machine, add the water, eggs, olive oil, honey, 1/2 cup of the Asiago cheese, milk powder, salt, basil, flours, and yeast in the order suggested by the manufacturer. Select the dough setting and let the machine knead the dough, checking after 5 minutes and adding 1-2 tablespoons of water or flour if needed.

Once the dough cycle is complete, turn the dough onto a lightly floured surface. Divide the dough into 12 equal balls. Use your thumb to poke a 1-1/2 inch hole through the center of each ball, then gently stretch and shape the dough to form an even ring. Cover and let the bagels rest for 10 minutes, then flatten them slightly.

Bring a Dutch oven filled two-thirds with water to a boil. Carefully drop the bagels, 2 at a time, into the boiling water. Cook for 45 seconds, flip, and cook for another 45 seconds. Remove the bagels with a slotted spoon and drain them well on paper towels.

In a small bowl, whisk together the egg white and 1 tablespoon of water. Brush the egg wash over the bagels, then sprinkle the remaining Asiago cheese on top. Place the bagels 2 inches apart on greased baking sheets. Bake at 400°F for 15-20 minutes, or until golden brown. Transfer the baked bagels to wire racks to cool.
