Preheat oven to 375°F. On a lightly floured surface, roll half the dough into a 1/8-inch thick circle and transfer it to a 9-inch pie plate. Chill while preparing the filling.

In a small bowl, combine the granulated sugar, brown sugar, flour, cinnamon, ginger, and nutmeg. In a large bowl, toss the sliced apples with the lemon juice. Add the sugar mixture and toss to coat the apples. Pour the filling into the chilled pie crust and dot with the butter.

Roll the remaining dough into a 1/8-inch thick circle and place it over the filling. Trim, seal, and flute the edge. Cut slits in the top crust. Beat the egg white until foamy and brush it over the crust. If desired, sprinkle with turbinado sugar and ground cinnamon.
