Homemade Caraway Rye Bread
This traditional Czechoslovakian rye bread is infused with the warm, earthy aroma of caraway seeds, creating a comforting and nostalgic loaf with a soft, tender crumb and a crisp, golden crust.

In a large bowl, dissolve the yeast in 1/2 cup of the warm water. Add the brown sugar, caraway seeds, oil, salt, and remaining water. Mix well.

Stir in the rye flour and 1 cup of the all-purpose flour, beating until smooth. Add enough of the remaining all-purpose flour to form a soft dough.

Turn the dough onto a floured surface and knead for 6-8 minutes, until smooth and elastic. Place the dough in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled in size, about 1 hour.

Punch down the dough and divide it in half. Shape each half into a ball and place them in two greased 8-inch round baking pans or ovenproof skillets. Flatten the balls to a 6-inch diameter. Cover and let rise until nearly doubled, about 30 minutes.

Preheat the oven to 375°F. Bake the loaves for 25-30 minutes, or until they are golden brown.
