Grease a baking sheet with 1 teaspoon of the butter.

In a microwave-safe bowl, combine the sugar and corn syrup. Microwave on high for 3 minutes, stirring to dissolve the sugar. Microwave for 2 minutes more. Stir in the cashews and remaining 1 teaspoon butter. Microwave on high for 40 seconds, then continue microwaving in 20-second intervals, stirring after each, until the mixture turns a light amber color, about 1-2 minutes total. (Caution: the mixture will be very hot.)

Quickly stir in the baking soda and vanilla until the mixture is light and foamy. Immediately pour the brittle onto the prepared baking sheet and spread it out with a metal spatula. Allow to cool slightly.

Refrigerate the brittle until set, about 15-20 minutes. Break the brittle into pieces and store between layers of waxed paper in an airtight container.
