Stir in the cashews and remaining 1 teaspoon butter. Microwave on high for 40 seconds, then continue microwaving in 20-second intervals, stirring after each, until the mixture turns a light amber color, about 1-2 minutes total. (Caution: the mixture will be very hot.)

    Quickly stir in the baking soda and vanilla until the mixture is light and foamy. Immediately pour the brittle onto the prepared baking sheet and spread it out with a metal spatula. Allow to cool slightly.
