Moist Peach Cake with Whipped Topping

Drain the peaches, reserving the juice. Add enough water to the juice to measure 1-1/4 cups. Cut the peaches into 1-inch pieces and set aside.

In a large bowl, beat the cake mix, peach juice mixture, oil, and eggs on low speed for 30 seconds, then on medium speed for 2 minutes. Pour the batter into two greased and floured 9-inch round baking pans. Bake at 350°F for 28-33 minutes, or until a toothpick inserted in the center comes out clean. Cool the cakes in the pans for 10 minutes, then remove them to wire racks to cool completely.

In a bowl, combine the whipped topping and yogurt. Fold in the reserved peach pieces. Spread the topping between the cake layers and over the top of the cake. Garnish with additional diced peaches, if desired. Store the cake in the refrigerator.
