In a saucepan, heat the milk, butter, and sugar over medium heat, stirring occasionally, until the butter is melted. Allow the mixture to cool to 120-130°F.
-
2
In a large bowl, combine 2 cups of flour, yeast, salt, 2 eggs, mashed bananas, and the warm milk mixture. Beat on low speed until combined, then beat on medium speed for 3 minutes.

Gradually add the remaining flour, stirring until a firm dough forms. Turn the dough onto a lightly floured surface and knead for 4-6 minutes until smooth and elastic.
-
4
Place the dough in a greased bowl, turning once to coat the top. Cover and let rise in a warm place until doubled in size, about 45 minutes.

Punch down the dough and divide it in half. Shape each half into a round loaf and place on a greased baking sheet. Cut slits in the tops of the loaves. Cover and let rise until doubled, about 45 minutes.
-

Preheat the oven to 375°F. Beat the remaining egg with water and brush the loaves. Bake for 30-35 minutes, or until golden brown.
