Baked Apple Pancake with Caramelized Apples

In a large bowl, combine the pancake mix, milk, oil, and egg. In an 8-inch ovenproof skillet, melt the butter. Stir in the brown sugar and apple slices, and sauté until the sugar is dissolved.

Pour the pancake batter over the apple mixture. Cook, uncovered, over medium heat until bubbles form on top of the pancake. Then, bake the pancake, uncovered, at 350°F for 12-17 minutes or until golden brown. Invert the pancake onto a serving platter and serve with maple syrup.
