Instructions
-
1
In a medium bowl, whisk together the all-purpose flour, whole wheat flour, sugar, baking soda, salt, and ground cinnamon. Fold in the chopped apples and raisins.
-
2
In a separate bowl, combine the buttermilk, egg yolk, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir just until combined, being careful not to overmix.
-
3
In a clean bowl, beat the egg white until soft peaks form, then gently fold the whipped egg white into the pancake batter.
-
4
Heat a lightly greased griddle or nonstick skillet over medium heat. Pour the batter onto the griddle, using about 1/4 cup per pancake. Cook until bubbles form on the surface, then flip and cook until the second side is lightly browned.
-
5
Meanwhile, in a small saucepan, whisk together the sugar, cornstarch, and apple cider or juice until smooth. Add the cinnamon stick and bring the mixture to a boil over medium heat, stirring constantly. Cook for 2 minutes, or until thickened. Remove the cinnamon stick and stir in the ground nutmeg.
-
6
Serve the warm apple cinnamon pancakes drizzled with the homemade cider syrup, and optionally, with a pat of butter on top.
