Baked Apple Pockets with Cinnamon Sugar

In a large bowl, combine 1 cup flour, yeast, 1 Tbsp sugar, and 1/2 tsp salt. In a saucepan, heat the 2/3 cup water and 1/4 cup butter to 120°-130°F. Add the wet ingredients to the dry ingredients and beat just until moistened. Stir in enough remaining flour to form a soft dough. Turn onto a floured surface and knead until smooth and elastic, about 6-8 minutes. Cover and let rest for 10 minutes.

Divide the dough into four portions. Roll each portion into an 8-inch square. Cut each square into four 4-inch squares. Toss the thinly sliced apples with 1/3 cup sugar, 2 Tbsp flour, and 1/2 tsp cinnamon. Place 1/4 cup of the apple filling onto each dough square. Bring the corners of the dough up over the filling and pinch to seal, securing with a toothpick if needed. Place the sealed pockets 3 inches apart on baking sheets coated with cooking spray. Cover and let rise in a warm place for 30 minutes.

Preheat the oven to 375°F. Brush the pockets with 1/4 cup milk and sprinkle with 4 tsp sugar. Bake for 12-14 minutes or until golden brown. Remove the pockets to wire racks and discard any toothpicks.
