In a large bowl, combine the flour and salt. Cut in the shortening until the mixture is crumbly. Gradually add the cold water, tossing with a fork until the dough forms a ball. Wrap the dough in plastic and refrigerate for 30 minutes.

In a large saucepan, combine the cherries and sugar. Mash the cherries slightly and let the mixture stand for 15-20 minutes. Stir in the cornstarch until blended. Bring the mixture to a boil over medium heat, cooking and stirring for 2 minutes or until thickened. Remove from heat and stir in the cinnamon. Allow the filling to cool.

Place about 3 tablespoons of the cherry filling on one side of each circle, then fold the dough over the filling. Press the edges with a fork to seal. Prick the tops of the turnovers with a fork.
