In a Dutch oven, heat olive oil over medium-high heat. Add onion, celery, and carrot; cook and stir for 4-6 minutes until tender. Add garlic and cook for 1 minute longer.

Add ground beef and pork; cook for 4-6 minutes, breaking into crumbles, until meat is no longer pink. Drain excess fat. Stir in white wine or beef stock and bring to a boil; cook until liquid is almost evaporated, about 1 minute.

Stir in beef stock and seasonings; bring to a boil. Reduce heat, cover, and simmer for 15 minutes to allow flavors to blend. Remove bay leaf; stir in 1 cup Alfredo sauce and egg yolks.

Preheat oven to 350°F. To assemble, spread 3/4 cup marinara sauce in a greased 13x9-inch baking dish. Layer with 4 noodles, 3/4 cup Alfredo sauce, and 2 cups of the meat mixture. Top with 4 more noodles, 3/4 cup marinara sauce, 4 more noodles, 3/4 cup Alfredo sauce, and the remaining meat mixture. Finish with the last 4 noodles and remaining marinara sauce. Drizzle the remaining Alfredo sauce over the top.
