Baked Cheesy Beef and Pasta Casserole

Cook the spiral pasta according to package directions. Meanwhile, in a large saucepan, cook the ground beef, onions, and garlic over medium heat until the beef is no longer pink. Drain the excess fat.

Stir the spaghetti sauce and sliced mushrooms into the beef mixture. Bring to a boil, then reduce heat and simmer for 20 minutes.

Preheat the oven to 350°F. Grease a 2.5-quart baking dish. Place 1/2 cup of the beef sauce in the bottom of the prepared dish. Top with half of the cooked pasta, then half of the remaining beef sauce. Spread the sour cream over the top, then sprinkle with the cubed Velveeta cheese. Top with the remaining pasta and beef sauce, then sprinkle with the shredded mozzarella cheese.
