Preheat oven to 375°F. In a small bowl, mix the mozzarella, ricotta, pepperoni, Parmesan, mushrooms, green pepper, onion, Italian seasoning, and salt.

Unroll the crescent dough and press the perforations to seal. Spread the cheese and vegetable mixture evenly over the dough, leaving a 1/4-inch border. Roll up the dough jelly-roll style, starting with the short side, and pinch the seam to seal.
