Cook the spaghetti according to package directions, then drain and place in a large bowl. Add the beaten eggs and Parmesan cheese, and mix well. Press the spaghetti mixture into three greased 9-inch pie plates, forming a crust on the bottom and up the sides.

In a large saucepan, sauté the onion in butter until tender. Remove from heat and stir in the sour cream and Italian seasoning. Spoon the sour cream mixture into the spaghetti crusts.

In a large skillet, cook the sausage over medium heat until no longer pink, then drain. Stir in the water and tomato paste, and simmer for 5-10 minutes or until thickened. Spoon the sausage mixture over the sour cream layer, then sprinkle with the mozzarella and cheddar cheeses.

Cover and freeze two of the pies for up to 1 month. Bake the third pie at 350°F for 35-40 minutes or until heated through.
