Preheat oven to 350°F. In a food processor, pulse together 2 cups of flour and salt until blended. Add 1 cup of cold butter and pulse until the mixture resembles coarse crumbs. Gradually add just enough ice water while pulsing to form a moist dough. Press the dough into the bottom of a greased 13x9-inch baking pan. Bake for 20-25 minutes, until the edges are lightly browned. Allow to cool on a wire rack.

In a large bowl, combine the sliced apples, 1 cup of sugar, and cinnamon. Toss to coat the apples evenly. Spread the apple mixture over the cooled crust. In the food processor, pulse the remaining 1 cup of flour, 1/2 cup of butter, and 1 cup of sugar until coarse crumbs form. Sprinkle the crumb topping over the apples. Bake for 60-70 minutes, until the topping is golden brown and the apples are tender. Allow to cool completely on a wire rack before cutting into bars.
