Shape the dough into eight 10-inch long logs. Wrap the logs in plastic wrap and refrigerate for 2 hours, until the dough is firm.

Bake for 12-14 minutes, until the edges are crisp and lightly browned. Allow the crisps to cool on the baking sheets for 1 minute, then transfer them to wire racks to cool completely. Store the cooled crisps in airtight containers in the refrigerator.
