Creamy Baked Turkey Enchiladas

Preheat the oven to 350°F. In a large saucepan, combine the cooked turkey, chicken broth, rice, chopped tomatoes, onion, green chiles, sour cream, olives, cilantro, and cumin. Bring the mixture to a boil, then reduce heat and simmer for 20 minutes, stirring occasionally, until the flavors have melded.

Assemble the enchiladas by placing about 3/4 cup of the turkey filling down the center of each flour tortilla. Top with 1 teaspoon of enchilada sauce and 1 tablespoon of shredded cheese. Roll up the tortillas and arrange them seam-side down in a greased 13x9-inch baking dish. Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.

Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 8-10 minutes, or until the enchiladas are hot and bubbly.
