Preheat the oven to 350°F. In a large bowl, combine the sour cream, half-and-half, onion, green chiles, salt, and pepper. Stir in the hash brown potatoes, cooked chicken, and 2 cups of the cheddar cheese.

Transfer the mixture to a greased 13x9-inch baking dish. Bake, uncovered, for 1 hour and 15 minutes, or until the top is golden brown. Sprinkle the remaining 1/2 cup of cheddar cheese over the top and bake for an additional 5-10 minutes, until the cheese is melted. If desired, garnish with chopped fresh cilantro before serving.
