In a large pot, combine the shredded chicken, water, cream of chicken soup, frozen vegetables, and diced potatoes. Bring the mixture to a boil over medium-high heat.

Stir in the cubed Velveeta cheese and continue cooking until the cheese is melted and the chowder is creamy, about 2-3 minutes. Do not boil.
