Crispy Baked Bacon Cheddar Potato Skins

Preheat oven to 475°F. Cut the baked potatoes in half lengthwise and scoop out the pulp, leaving a 1/4-inch shell. Place the potato skins on a greased baking sheet.

In a small bowl, combine the oil, Parmesan, salt, garlic powder, paprika, and black pepper. Brush the mixture over the inside and outside of the potato skins.

Bake the potato skins for 7 minutes on each side, or until crisp. Sprinkle the crumbled bacon and shredded cheddar cheese inside the skins. Bake for an additional 2 minutes, or until the cheese is melted. Top with a dollop of sour cream and sliced green onions. Serve immediately.
