Crispy Baked Beef Tacos

Preheat oven to 425°F. In a large skillet, cook the ground beef over medium heat for 6-8 minutes, breaking it up as it cooks, until no longer pink. Drain the excess fat, then stir in the taco seasoning and 1 can of undrained diced tomatoes and green chiles. Heat through.

In a bowl, mix the refried beans, 1/2 cup of the shredded cheese, the chopped cilantro, and the remaining can of undrained diced tomatoes and green chiles. If desired, add a teaspoon of hot pepper sauce.

Spread the bean mixture in the bottom of a greased 13x9-inch baking dish. Stand the taco shells upright on top of the bean mixture. Fill each shell with about 1 tablespoon of the remaining shredded cheese and 1/3 cup of the seasoned ground beef mixture.

Bake the tacos, covered, for 15 minutes. Uncover and sprinkle with the remaining shredded cheese. Bake for an additional 5-7 minutes, or until the cheese is melted and the shells are lightly browned. Garnish with the chopped green onions.
