Instructions
-
1
Preheat the oven to 325°F. In a large bowl, combine the melted butter, eggs, and vanilla until well blended.
-
2
In a separate bowl, whisk together the flour, sugar, cocoa powder, baking powder, and baking soda. Gradually add the dry ingredients to the wet ingredients, mixing just until combined (the dough will be crumbly).
-
3
Turn the dough onto a lightly floured surface and knead in the toasted almonds and chocolate chips. Divide the dough in half and shape each portion into a 12x3-inch log, placing them about 3 inches apart on an ungreased baking sheet.
-
4
Bake for 30-35 minutes, until the logs are set and the tops are cracked. Allow to cool for 15 minutes, then carefully transfer the logs to a cutting board and slice them diagonally into 1/2-inch thick slices.
-
5
Arrange the sliced biscotti cut-side down on ungreased baking sheets and bake for an additional 20-25 minutes, until the biscotti are firm and dry. Transfer to wire racks to cool completely.
-
6
In a microwave, melt the white baking chips and shortening at 70% power for 1 minute, then stir. Continue microwaving in 10-20 second intervals, stirring until the mixture is smooth. Drizzle the melted white chocolate over the cooled biscotti.
