Hearty Andouille Sausage and Vegetable Soup

In a large stockpot, heat the canola oil over medium heat. Add the chopped onions, carrots, and green pepper. Cook and stir until the vegetables are tender, about 8-10 minutes. Add the minced garlic and cook for 1 minute longer.

In the same pot, brown the andouille chicken sausage over medium heat. Add the cubed red potatoes, crushed tomatoes, Worcestershire sauce, black pepper, beef broth, and the cooked vegetable mixture. If desired, stir in the liquid smoke and cayenne pepper. Bring the soup to a boil, then reduce the heat and simmer, covered, until the potatoes are tender, about 15-20 minutes.
