In a large stockpot, cook the chicken in water until tender. Cool the broth and skim off any fat. Set the chicken aside until cool enough to handle, then remove the meat from the bones and discard the bones. Cut the chicken meat into cubes and return it to the pan.

Add the remaining ingredients to the pot - the carrots, celery, barley, onion, bouillon, salt, bay leaf, poultry seasoning, pepper, and sage. Bring the soup to a boil, then reduce the heat, cover, and simmer for 1 hour or until the vegetables and barley are tender.
