Homemade Creamy Potato Bread
This classic potato bread has a crisp crust and a soft, creamy interior. The mashed potatoes give the bread a delightful texture and subtle flavor that pairs perfectly with soups, stews, or simply slathered with butter.

In a small saucepan, bring the diced potato and 1-1/2 cups of water to a boil. Reduce heat, cover, and simmer until the potato is very tender. Drain, reserving 1/2 cup of the cooking liquid. Mash the potatoes and set aside.

In a large bowl, dissolve the yeast in the warm water. Add the warm milk, butter, sugar, salt, 4 cups of flour, the mashed potatoes, and the reserved cooking liquid. Beat until smooth. Gradually stir in the remaining flour to form a stiff dough.

Turn the dough onto a lightly floured surface and knead for 6-8 minutes until smooth and elastic. Place the dough in a greased bowl, turning once to coat the top. Cover and let rise in a warm place until doubled in size, about 1 hour.

Punch down the dough. Turn it onto a lightly floured surface and divide it in half. Shape each half into a loaf and place in two greased 9x5-inch loaf pans. Cover and let rise until doubled, about 30 minutes.

Preheat the oven to 375°F. Sprinkle the loaves lightly with additional flour. Bake for 35-40 minutes or until golden brown. Remove the loaves from the pans and transfer to wire racks to cool.
