Moist Banana Bread Squares

Preheat oven to 350°F. Grease a 13x9-inch baking dish. In a small bowl, beat the egg whites until soft peaks form; set aside.

In a large bowl, cream the shortening and sugar until light and fluffy. Beat in the egg yolks, then stir in the mashed bananas.

In a separate bowl, whisk together the flour and baking soda. Add the flour mixture to the creamed mixture alternately with the buttermilk, beating well after each addition. Stir in the vanilla.

Gently fold the beaten egg whites into the batter. If desired, fold in the chopped walnuts.

Pour the batter into the prepared baking dish. Bake for 45-50 minutes, until a toothpick inserted in the center comes out clean. Allow the squares to cool on a wire rack.
