Preheat oven to 350°F. In a bowl, combine the onion, chives, basil, garlic, salt, pepper, and 3/4 teaspoon of the paprika. Add the pork sausage and mix until well combined.

On a lightly floured surface, roll each puff pastry sheet into an 11x10.5-inch rectangle. Cut each sheet lengthwise into 3 equal strips. Place 1/2 cup of the sausage mixture down the center of each strip. Fold the sides of the pastry over the filling, pinching the edges to seal.
