In a small bowl, combine the sugar, cinnamon, ginger, cardamom, and allspice. Remove 1/2 cup of the sugar mixture and set it aside in a shallow bowl.

In a large bowl, cream the butter and the remaining sugar mixture until light and fluffy, about 5-7 minutes. Beat in the eggs and vanilla. In a separate bowl, whisk together the flour, cream of tartar, baking soda, and salt. Gradually add the dry ingredients to the creamed mixture and mix well.

Preheat the oven to 350°F. Shape the dough into 1-1/2-inch balls and roll them in the reserved sugar mixture. Place the coated dough balls 2 inches apart on parchment-lined baking sheets. Bake for 10-13 minutes, or until the edges begin to brown. Allow the cookies to cool on the baking sheets for 2 minutes before transferring them to wire racks to cool completely.
