Strawberry Swirl Cake

Preheat oven to 350°F. Prepare and bake the white cake mix according to package directions, using a greased 13x9-inch baking pan.

In a small bowl, dissolve the cherry gelatin in the boiling water, stirring for 2 minutes until completely dissolved. Allow to cool slightly. Once the cake is baked, use a wooden skewer to poke holes all over the top of the warm cake, twisting gently to create slightly larger holes. Slowly pour the gelatin mixture over the top of the cake, ensuring it fills each hole.

In a large bowl, beat the cream cheese until light and fluffy. Fold in the whipped topping until well combined. Carefully spread the cream cheese frosting over the top of the cooled cake. Top with the chopped fresh strawberries. Refrigerate the cake for at least 2 hours before serving.
