Tangy Pickled Vegetable Relish

In a large bowl, toss the cauliflower, celery, carrot, and peppers with the salt. Add cold water to cover and refrigerate, covered, overnight.

Drain the vegetables, rinse with cold water, and drain again. In a large nonreactive bowl, whisk together the vinegar, garlic, oregano, and red pepper flakes. Gradually whisk in the oil until blended. Add the olives and drained vegetables, and toss to coat. Refrigerate, covered, overnight to allow the flavors to blend.
