In a large bowl, whisk the first 6 dry ingredients until well blended. Store the muffin mix in airtight containers in a cool, dry place or in the freezer for up to 6 months.

Preheat oven to 400°F. Whisk together the egg, milk, and melted butter. Add 2-3/4 cups of the muffin mix, stirring just until moistened. Fill paper-lined muffin cups three-fourths full. Bake until a toothpick inserted in the center comes out clean, 18-21 minutes. Cool for 5 minutes before removing from the pan to a wire rack. Serve warm.

For flavored muffins, fold in 1 cup of desired mix-ins (such as fresh or frozen blueberries, diced rhubarb, mashed bananas, chopped cranberries and pecans, dried apricots and cherries, chocolate chips and instant coffee, shredded carrots and raisins, shredded apple and cheese, chopped figs and pistachios, or shredded zucchini and pineapple tidbits) before baking.
