Vibrant Stained Glass Gelatin Dessert
This visually stunning dessert features a buttery graham cracker crust topped with vibrant layers of lime, strawberry, and orange gelatin cubes suspended in a creamy pineapple whipped topping. The result is a delightful treat that resembles stained-glass windows when sliced.
Instructions
-
1
Combine the lime gelatin with 1-1/2 cups boiling water, stirring until the gelatin is dissolved. Pour the mixture into a lightly greased 8x4-inch loaf pan and chill until very firm. Repeat this process to make the strawberry and orange gelatins in separate pans.
-
2
In a bowl, combine the graham cracker crumbs, sugar, and melted butter. Press the mixture into a greased 13x9-inch baking dish and chill.
-

In a small bowl, soften the unflavored gelatin in the cold water for 5 minutes. In a small saucepan, bring the pineapple juice to a boil, then stir in the softened unflavored gelatin until dissolved. Transfer the mixture to a large bowl and let it cool to room temperature, about 20-30 minutes.

When the flavored gelatins are firm, cut them into 1/2-inch cubes. Whisk the whipped topping into the pineapple juice mixture, then gently fold in two-thirds of the gelatin cubes. Spoon the mixture over the graham cracker crust and top with the remaining gelatin cubes. Chill the dessert for at least 2 hours before serving.
