Zesty Black Bean Rice Burgers
These flavorful pan-fried black bean and brown rice patties are topped with a zesty salsa and creamy sour cream sauce, creating a satisfying meatless burger that will please any meat-and-potatoes lover.

In a large nonstick skillet, cook the onion in 1 Tbsp of oil over medium heat until translucent but not browned, about 2-4 minutes. Remove from heat and set aside.

In a food processor, pulse half the black beans and 1/2 cup of the cooked rice until a thick paste forms. In a large bowl, combine the processed bean mixture, remaining black beans and rice, cooked onion, bread crumbs, egg yolks, 2 Tbsp of the salsa, salt, and pepper. Mix well with your hands, squeezing until the mixture holds together. Form the mixture into 4 patties.

Cook the patties in the remaining 1 Tbsp of oil over medium heat until firm and browned, about 4-5 minutes per side.

In a small bowl, combine the sour cream and the remaining 1/4 cup of salsa. Layer a lettuce leaf, burger, cheese, and the sour cream mixture on each bun bottom. Add sliced tomato and red onion if desired. Replace the bun tops.
