In a large, heavy saucepan, combine the sugar, corn syrup, and water. Bring the mixture to a boil over medium heat, stirring occasionally, and cook for 3 minutes or until the sugar has dissolved. Remove the lid and continue cooking on medium-high heat, without stirring, until a candy thermometer reads 300°F (hard-crack stage).

Carefully remove the pan from the heat and stir in the anise extract (or anise oil, keeping your face away from the mixture as the aroma will be very strong). Add the red food coloring and mix well. Pour the hot candy mixture into a buttered 13x9-inch pan. Allow the candy to cool slightly but not harden completely, then cut it into 1-inch squares. Let the candies cool completely before storing them in an airtight container.
