Cook, uncovered, until a candy thermometer reads 270°F (soft-crack stage). Add the honey, salt, and remaining cubed butter, stirring constantly until the mixture reaches 300°F (hard-crack stage).

Remove the pan from the heat and stir in the rum extract. Pour the hot candy into the prepared baking pan without scraping the sides. Do not spread the candy. Allow it to cool until it's almost set, about 1-2 minutes. Score the candy into 1-inch squares, then let it cool completely. Break the squares apart and store the candies in an airtight container.
