Line an 8-inch square pan with foil and grease the foil with 1 teaspoon of the butter.

In a large saucepan, combine the sugar, evaporated milk, salt, and remaining 2 tablespoons of butter. Cook and stir over medium heat until the mixture comes to a boil. Boil for 5 minutes, stirring constantly.

Remove the pan from the heat and stir in the marshmallows, butterscotch chips, toasted walnuts, and maple flavoring. Stir until the marshmallows and chips are melted and the mixture is smooth.

Spoon the fudge into the prepared pan and let it stand until set. Use the foil to lift the fudge out of the pan, then discard the foil and cut the fudge into 1-inch squares. Store the fudge in an airtight container at room temperature.
