In a large skillet, cook the diced bacon over medium heat until crisp. Remove the bacon to paper towels, reserving 2 teaspoons of the bacon drippings. Stir the reserved drippings into the crushed cornflakes and set aside.

In a large bowl, combine the lightly beaten eggs, milk, cottage cheese, shredded cheddar cheese, sliced green onion, salt, and pepper until well blended. Stir in the frozen hash brown potatoes.
