Bacon, Egg, and Hash Brown Breakfast Casserole

Preheat the oven to 350°F. In a large skillet, cook the bacon over medium-low heat until crisp. Remove and drain on paper towels. Discard all but 2 tablespoons of bacon drippings. In the same skillet, sauté the onion and green pepper until tender in the drippings, then remove with a slotted spoon.

In a large bowl, whisk together the eggs, milk, salt, and pepper. Stir in the hash browns, cheese, vegetable mixture, crispy bacon, and dill. For a fluffier casserole, blend the egg mixture in a blender for up to 5 seconds on high.

Transfer the mixture to a greased 13x9-inch baking dish. Bake, uncovered, until a knife inserted in the center comes out clean, 35 to 45 minutes. Allow the casserole to set for 10 to 15 minutes before serving. Garnish with parsley, if desired.
