Baked Broccoli and Cheddar Casserole

Preheat the oven to 350°F. In a large skillet over medium heat, sauté the broccoli and onion in the butter until crisp-tender, about 5-7 minutes. Set aside.

In a large bowl, whisk together the eggs, heavy cream, and 1 3/4 cups of the shredded cheddar cheese. Stir in the sautéed broccoli mixture, salt, and pepper.

Pour the egg mixture into a greased 3-quart baking dish. Place the baking dish in a larger pan filled with 1 inch of hot water.

Bake the casserole, uncovered, for 45-50 minutes, or until a knife inserted in the center comes out clean. Sprinkle the remaining 1/4 cup of shredded cheddar cheese over the top.
