Baked Butterscotch Toffee Cheesecake Bars

Preheat oven to 350°F. In a large bowl, combine the yellow cake mix, butterscotch pudding mix, canola oil, and 1 egg. Mix until the mixture becomes crumbly. Reserve 1 cup of the crumb mixture for the topping. Press the remaining mixture into an ungreased 13x9-inch baking pan. Bake for 10 minutes, then cool completely on a wire rack.

In a small bowl, beat the cream cheese and sugar until smooth. Add the remaining egg and beat on low speed just until combined. Fold in 1/2 cup of the toffee bits. Spread the cream cheese mixture over the cooled cake base. Sprinkle the reserved crumb mixture over the top.

Bake for 15-20 minutes, or until the filling is set. Sprinkle the butterscotch chips and the remaining 1/2 cup of toffee bits over the top. Return to the oven and bake for 1 minute longer. Allow the bars to cool on a wire rack for 1 hour, then refrigerate for at least 2 hours before cutting into bars.
